Spackling Your Chicken

 ... is what it looked like when I applied the Alabama White BBQ Sauce to my smoked chicken last night.

I'd been wanting to try Alabama White Sauce for quite some time and had even bought a chicken to put on the smoker as the proper vehicle for it when, out of the blue, Mary from Deep South Dish posted her recipe for ... wait for it ... Smoked Chicken with Alabama White Sauce. It was serendipity squared!

The recipe calls for a spicy rub and then a half hour of smoking. After the half hour you brush on the white sauce and smoke it some more. The sauce itself is made of mayo, lemon juice, apple cider vinegar and various spices. When I tasted it, the vinegar dominated and I wondered if Chicago-Yankee wife kitteh would be disgusted with the result. Nope! She declared it excellent and a good meal was had by all.

Mayonnaise on chicken?!? You must be mad!

Ugh! It looks like spackle or maybe toothpaste. Horrid!

Wait a minute, that looks pretty good. Let's eat!
